Ingredients for Creole shrimp gumbo

Chicken broth or water - 1.5 liters
Sea bass fillet - 500 Gram
Raw shrimp 500–700 large Gram
Chopped tomatoes - 400 Gram
Okra or green beans - 500 Gram
Green sweet peppers - 2 large
Large onions - 2
Garlic - 4 cloves
Butter - 80 Gram
Vegetable oil - 5 tbsp
Flour with a slide - 3 tbsp
Worcester sauce - 2 Tsp
Sprigs of thyme - 2
Bay leaves - 2
Allspice peas - 1 Tsp
Salt Freshly ground black pepper
Cayenne pepper
Boiled rice and Tabasco sauce for serving

How to make Creole shrimp gumbo

Step 1 - Mix the vegetable oil with the flour in a saucepan with a thick bottom. Put on a small fire and fry, stirring all the time, until the mixture turns dark brown, almost black.

Step 2 - Peel and finely chop the onion. Remove the seeds and partitions from the sweet peppers, cut the pulp into cubes. Crush, peel and chop the garlic. Cut the gummy into pieces 1.5 cm long.

Step 3 - Melt 2/3 of the butter in a wide pan with a thick bottom. Put onions in a saucepan, fry over medium heat for 5 minutes. Put garlic and pepper, fry for 7–8 minutes.

Step 4 - Add tomatoes. Simmer without a lid, stirring often, 30 min. Pour in the broth, add the okra (beans), add the Worcester sauce, thyme leaves, bay leaf, allspice, and cayenne pepper.

Bring to a boil and, stirring constantly with a whisk, add the fried flour. Stir to avoid lumps. Cover tightly and stew over low heat for 1-hour salt and pepper.

Step 5 - Peel the shrimp shells (tails better to leave). Remove the dark intestinal vein by incising the back in the center. Melt the remaining butter in a pan fry the shrimp on high heat for 30 seconds from each side.

Step 6 - Cut the fish into medium chunks. Put the fish and shrimps together with the butter, in which they were fried, in gumbo, cook for 3 minutes. Remove from heat let it sit under a lid for 5 minutes.
